Inovasi Pemanfaatan Limbah Kulit Nanas menjadi Minuman Probiotik Tepache

Abstract


Abstract Pineapple peel waste is generally not utilized optimally, posing a potential risk of environmental pollution, even though it contains beneficial nutrients and bioactive compounds. This community service activity aimed to increase public knowledge about the use of pineapple peel waste as a raw material for the probiotic beverage tepache and to encourage its utilization as a value-added product. The method used was face-to-face outreach to approximately 35 women from the PKK (Family Welfare Movement) through presentations, discussions, and Q&A sessions on pineapple peel waste management, the benefits of probiotics, and the tepache production process. The results of the activity showed that participants enthusiastically attended the training, actively participated in discussions, and gained a better understanding of the benefits of tepache for health, the environment, and economic opportunities. This activity demonstrated that training is effective in raising public awareness about processing pineapple peel waste into products that are beneficial, economically valuable, and environmentally friendly.
